Cold Brew with Lavender Cold Foam: A Floral Drink for Warm Afternoons Butterfly Pea Flower Simple Syrup: The One Bottle Your Coffee Bar Needs

If you've ever watched a butterfly pea flower latte turn from deep blue to soft violet when lemon juice hits it, you already know the small magic I'm talking about. It never gets old. And the best part is that you don't need any special equipment or rare ingredients to make it happen at home. You need dried butterfly pea flowers, sugar, water, and about fifteen minutes.

This syrup has become the quiet workhorse of my little coffee corner. I keep a bottle in the fridge, and it turns an ordinary glass of milk or a plain iced americano into something that looks like it came from a cafe with a much better budget than mine. The color is deep and saturated, almost ink-like in the bottle, but it dilutes into the prettiest periwinkle blue once it hits a cold drink.

Making the Syrup

Combine one cup of water and one cup of sugar in a small saucepan over medium heat. Stir until the sugar dissolves, then take it off the heat and add a generous handful of dried butterfly pea flowers. Let them steep for ten to fifteen minutes. The longer you wait, the deeper the blue, but past twenty minutes it can start to taste a little woody, so I usually pull the flowers out around the twelve-minute mark.

Strain the syrup into a clean jar or bottle. It will keep in the refrigerator for about two weeks, though mine rarely lasts that long. If you want a slightly more complex flavor, add a strip of lemon peel or a few dried lavender buds to the steep. Just be careful with lavender. It's assertive, and a little goes a long way.

Three Ways to Use It

The most obvious move is an iced latte. Fill a glass with ice, pour in your milk of choice, add a shot or two of espresso, and then slowly drizzle the blue syrup down the side. It sinks and swirls and makes a little show of itself before you stir it together. Add a squeeze of fresh lemon juice and watch the whole thing blush purple.

For something lighter, try a butterfly pea soda. A tablespoon of syrup, a squeeze of lime, plenty of ice, and sparkling water. It's the kind of drink that makes a hot afternoon feel manageable. And if you're feeling playful, spoon a little syrup over vanilla ice cream. It freezes into faint blue ribbons and tastes faintly of sweet tea and flowers.

The syrup is also a nice way to dress up a plain cold brew without adding dairy. Just a teaspoon or two gives you color and a whisper of sweetness. It's the sort of small trick that makes your own kitchen feel a bit more like the cafes you love, without any of the fuss or the line at the counter.
